What it says
Sunday dinners for Hannah. The list on the refrigerator, so that I do not make the same thing three weeks running.
1. The lentil thing (below).
2. Squash soup, with bread.
3. Mushroom and wild rice loaf, the Christmas one.
4. Egg bake with spinach and cheese.
5. Pasta with the garden's tomatoes, while there are any.
6. Bean chili, the pot without meat.
7. Lefse, potatoes and three vegetables, for a Norwegian who has given up the main course.
Nothing with tree nuts is to become a habit in this kitchen in any case, because of Theo.
THE LENTIL THING, as made yesterday:
- 1 1/2 cups brown lentils, rinsed
- an onion, two carrots, two stalks of celery, chopped small and softened in olive oil
- two cloves of garlic, a spoonful of tomato paste, a bay leaf, thyme
- 4 cups of VEGETABLE broth. Not chicken. I have had to buy it.
- Simmer 35 minutes, until the lentils hold their shape and no longer bite back.
- A splash of vinegar at the end, and salt, which Ray's half does not get.
Over rice, with a salad. It fed three with enough left for her to take back in a jar.
