What it says

Two starters now. Lorraine gave me hers on Thursday. Ray has labelled the jars S (Sigrid) and S Sr. The Saturday routine, for both: FEEDING (Saturday morning, before anything else) - Take the jar from the refrigerator. Pour off all but about 2 tablespoons. (The poured-off part goes into pancakes or the compost, not down the drain.) - Add 1/2 cup flour (half bread flour, half whole wheat) and a scant 1/2 cup lukewarm water. Stir until there is no dry flour. - Lid on LOOSE. Leave on the counter until it has doubled and is full of bubbles, 4 to 8 hours depending on the kitchen. - Take what the bread needs. Feed again lightly. Back in the refrigerator. THE LOAF, as I make it: - 1/2 cup lively starter, 1 1/2 cups water, 3 cups bread flour, 1 cup whole wheat, 2 teaspoons salt. - Mix, rest half an hour, then fold it over itself four times over two hours. - Shape, into the floured basket, into the refrigerator overnight. - Sunday morning: the iron pot heated in a 475 oven; loaf in, slashed, lid on, 25 minutes; lid off, 20 more. A starter can be ignored in the refrigerator for three weeks and forgives it. It cannot be left with the lid tight; and it does not like metal spoons, or so Lorraine said. I alternate: Sigrid one Saturday, her mother the next.

Two starters now. Lorraine gave me hers on Thursday. Ray has labelled the jars S (Sigrid) and S Sr.

    The Saturday routine, for both:

FEEDING (Saturday morning, before anything else)
    - Take the jar from the refrigerator. Pour off all but about 2 tablespoons. (The poured-off part goes into pancakes or the compost, not down the drain.)
    - Add 1/2 cup flour (half bread flour, half whole wheat) and a scant 1/2 cup lukewarm water. Stir until there is no dry flour.
    - Lid on LOOSE. Leave on the counter until it has doubled and is full of bubbles, 4 to 8 hours depending on the kitchen.
    - Take what the bread needs. Feed again lightly. Back in the refrigerator.

THE LOAF, as I make it:
    - 1/2 cup lively starter, 1 1/2 cups water, 3 cups bread flour, 1 cup whole wheat, 2 teaspoons salt.
