What it says

Applesauce, as actually made today, not as the canning book says. Half a bushel (about 21 lb) from the orchard on the Verona road: two-thirds Cortland, one-third McIntosh. Wash, quarter, do NOT peel or core. Into the two big kettles with about an inch of cider in the bottom of each. Simmer 25 minutes, stirring, until it slumps. Through the food mill. No sugar for the Cortlands. One cinnamon stick per kettle, taken out before milling. Hot into pint jars, half-inch headspace. Water bath 20 minutes (the book says 15; Mom did 20). Yield: 14 pints.
